5 Gluten-Free Kid Lunches Made with Tortillas

When kids are stuck at home for the summer, it helps to have an arsenal of quick lunch ideas that you know they’ll eat. And when your child is gluten-free and a picky eater (we’re just guessing), having a variety of easy, kid-friendly gluten-free options in your back pocket is even more important. 1. Barbecue chicken quesadillas

We’ve never known a kid to pass on barbecue sauce! This recipe uses up leftover chicken in a simple oven-baked quesadilla. Serves 3.

Ingredients:
2 cups cooked shredded chicken (from leftover chicken breast or a gluten-free rotisserie chicken)
¾ cup gluten-free barbecue sauce
6 Mikey’s Gluten-Free Cassava Tortillas
2 cups shredded dairy-free cheddar cheese
6 slices bacon, cooked to desired crispness

Directions:

  1. Heat oven to 350 F.
  2. In a bowl, toss shredded chicken with barbecue sauce.
  3. Place 3 tortillas on a baking tray and top each with dairy-free cheese, chicken and bacon, followed by a second tortilla.
  4. Bake until edges turn brown, about 10 minutes.
  5. Allow to cool slightly, then cut each quesadilla into four triangles. Serve.

 

2. Pepperoni pizza quesadillas

Pizza is always a winner! Kids can even help make these and add all of their favorite toppings. Serves 3.

Ingredients:
6 Mikey’s Gluten-Free Cassava Tortillas
1 cup pizza sauce
1 ½ cups dairy-free mozzarella cheese
1 cup gluten-free turkey pepperoni

Directions:

  1. Heat oven to 350 F.
  2. Place three tortillas on a baking sheet and top each with sauce, dairy-free mozzarella and pepperoni, followed by a second tortilla.
  3. Bake until edges turn brown, about 10 minutes.
  4. Allow to cool slightly, then cut each quesadilla into four triangles. Serve.

 

3. Toasted Peanut Butter and Banana Tortillas

Peanut butter and banana is a classic combo, and it’s even better inside warm, toasty tortillas! Serves 3.

Ingredients:
3 Mikey’s Gluten-Free Cassava Tortillas
1 teaspoon ground cinnamon
1 teaspoon granulated sugar
½ cup peanut butter
2 bananas, sliced

Directions:

  1. In a small bowl, combine cinnamon and sugar.
  2. Heat a non-stick pan over medium heat. Place tortillas in the pan one at a time and cook on both sides until soft.
  3. Sprinkle tortillas with cinnamon sugar and then spread with peanut butter. Layer with banana slices. Fold in half and serve.

 

4. Grilled Ham and Cheese Tortillas

This is a grilled cheese inside a gluten-free tortilla—what’s not to love? Serves 3.

Ingredients:
3 Mikey’s Gluten-Free Cassava Tortillas
6 slices dairy-free cheddar cheese
6 slices gluten-free deli ham

Directions:

  1. Heat a non-stick pan over medium heat. When hot, add ham slices and cook until warmed and slightly brown.
  2. Remove ham from pan. Clean pan and return to heat.
  3. Place a tortilla in the pan and layer with 2 slices of dairy-free cheese and 2 slices of ham. Cook 2-3 minutes until tortilla is golden on the bottom and cheese is beginning to melt. Fold tortilla in half to sandwich. Repeat with remaining tortillas.

 

5. Veggie Sticks and Hummus Tacos

There’s no stove required for this one! Fill a tortilla with hummus and your child’s favorite raw veggies and serve it taco-style! Serves 3.

Ingredients:
3 Mikey’s Gluten-Free Cassava Tortillas
1 cup store-bought hummus
1 cucumber, sliced
1 bell pepper, sliced
2 carrots, peeled and cut into sticks

Directions:

  1. Spread hummus on tortillas and fill with veggies. Serve taco-style!
