breakfast tostada

Bacon, eggs, and Mikey’s! Sounds like a great morning! A splash of your favorite hot sauce is the perfect topper to get you going.


  • 2 Mikey’s gluten free tortillas
  • 4 slices high quality bacon
  • 2 extra large eggs
  • 1 lime
  • 1 tsp minced red onion
  • 1 avocado
  • ½ tsp fresh cilantro chopped
  • Salt and pepper to taste


  1. Preheat a non stick pan on medium heat
  2. In a small bowl squeeze the juice from a fresh lime
  3. Add avocado, salt, and pepper and mash
  4. Toast Mikey’s tortillas in the pan until golden brown and slightly crispy
  5. Place bacon in the pan and cook until desired doneness
  6. Drain almost all the bacon grease from the pan leaving just 1 tsp
  7. Crack two eggs in the pan cooking until the whites are completely cooked
  8. Spread avocado mash on tortillas
  9. Top with bacon, egg, red onion, and cilantro
