avocado toast with prosciutto and arugula
Keep your avocado toast keto by using Mikey’s Grain-Free English Muffins instead of bread. Pile it high with prosciutto for extra protein and arugula for extra greens.
Ingredients:
- 2 Mikey’s Grain-Free English Muffins
- 1 avocado, mashed
- 4 ounces prosciutto, divided
- ½ cup arugula
- ¼ cup cherry tomatoes, sliced
- 1 teaspoon chives, diced
Instructions:
- Toast English muffins in toaster oven according to package directions.
- Spread ¼ of the mashed avocado on each muffin half.
- Top with arugula, cherry tomatoes, prosciutto and chives. Enjoy!
