For an easy keto (and vegetarian!) sandwich, use Mikey’s Grain-Free English Muffins in place of bread and stack it high with avocado, veggies and pesto.

Ingredients:

  • 2 Mikey’s Grain-Free English Muffins
  • ⅓ cup pesto
  • 1 avocado, cut into slices
  • ¼ cup baby spinach leaves
  • ½ small zucchini, peeled and cut into slices
  • 6 small lettuce leaves
  • 6 cucumber slices
  • ¼ cup cherry tomatoes, sliced in half
  • 3 tablespoons mayonnaise (no sugar added)

Instructions:

  1. Toast English Muffins according to the package instructions.
  2. Spread pesto on two muffin halves, and then layer with avocado slices, baby spinach leaves, zucchini and lettuce, cucumber slices and cherry tomatoes.
  3. Spread mayo on remaining muffin halves and top sandwiches.
