keto-friendly pesto avocado sandwich

Ingredients:
- 2 Mikey’s Grain-Free English Muffins
- ⅓ cup pesto
- 1 avocado, cut into slices
- ¼ cup baby spinach leaves
- ½ small zucchini, peeled and cut into slices
- 6 small lettuce leaves
- 6 cucumber slices
- ¼ cup cherry tomatoes, sliced in half
- 3 tablespoons mayonnaise (no sugar added)
Instructions:
- Toast English Muffins according to the package instructions.
- Spread pesto on two muffin halves, and then layer with avocado slices, baby spinach leaves, zucchini and lettuce, cucumber slices and cherry tomatoes.
- Spread mayo on remaining muffin halves and top sandwiches.
