lox and muffins
There’s “lox” to love about this gluten-free take on classic lox ‘n bagels!
Ingredients:
- 1 Mikey’s Toasted Onion Grain-Free English Muffin
- 4 ounces cream cheese or vegan cream cheese
- 4 ounces smoked salmon
- ¼ cup seedless cucumber, sliced thinly
- ¼ cup red onion, sliced thinly
- 2 teaspoons capers
Instructions:
- Toast English muffin in toaster oven according to package directions. Spread with cream cheese and layer with cucumber, salmon and onion. Top with capers and serve.
