  • 2 slices Mikey’s gluten free bread
  • 4 oz mesclun green mix
  • 2 oz multicolor cherry tomatoes
  • ¼ cucumber sliced
  • 1 oz shaved parmesan cheese
  • 1 oz grated parmesan cheese
  • 3 tsp extra virgin olive oil
  • 1 tsp red wine vinegar
  • ½ tsp spicy brown mustard
  • ¼  tsp dried oregano
  • Salt and pepper to taste


  1. Cut Mikey’s bread into ½ inch cubes
  2. In a bowl toss 1 tsp oil, 1/8 tsp oregano grated parm, salt and bread
  3. Lay on a baking tray in a single layer and bake at 350 degrees until golden brown
  4. In a bowl combine remaining oil and oregano, vinegar, salt and pepper and whisk
  5. Add greens, tomato, and cucumber and toss in dressing
  6. Top with shaved parmesan and croutons and croutons and serve
