Pizza for breakfast? Um, yes, please. Mikey’s gluten-free pizza crust serves as a delicious blank canvas to load with nutritional powerhouses like spinach, avocado, and sprouts.

Superfood Breakfast Pizza


  • 1 Mikey’s gluten free pizza crust
  • ½ cup packaged hollandaise mix
  • 1 extra large egg
  • 1 tsp extra virgin olive oil
  • ½ cup alfalfa sprouts
  • ½ cup baby spinach
  • ½ avocado cut into cubes
  • ¼ tsp red pepper flakes
  • Salt and pepper to taste


  1. In a toaster oven set to broil toast Mikey’s pizza crust on one side
  2. Prepare hollandaise according to directions on the package
  3. Spread hollandaise onto pizza crust\
  4. Top with baby spinach
  5. Return to toaster oven and cook until brown on the other side
  6. Preheat a small non stick pan on medium heat
  7. Crack egg into pan and cook until whites are completely cooked
  8. Sprinkle egg with red flakes, salt and pepper
  9. Top pizza with egg, sprouts, and avocado; cut and serve
